hoshigaki making

Took this last year around this time of the year while helping out 80-something years old grandmother making hoshigaki 干し柿 out of 渋柿 sour persimmons. They tend to be bitter and sour before drying completely in cold wind that magically turns them into sweet and chewy dessert.
